Leftover Butternut Squash Soup Challenge

Reducing waste and actually eating leftovers are important to me. I was able able to re-purpose a big batch of butternut squash soup my wife made for a few days– as a soup and as a sauce. It added a nice pop and some new flavor to some of my staple dishes.
